The ADA (American Diabetes Association) and AHA (American Heart Association) combined forces to create this excellent and healthy cookbook. If you're looking for recipes that serve two or you are single and want to keep leftovers minimized, this would be a good fit for you.
Need recipes for three or four - no problem, it's easy to double the ingredients and you still have diabetes and heart healthy meals!
Meal preparation averages ten minutes (not including cooking time) which is a really important feature for me! And the foods used can be picked up at your local grocery store.
All of the recipes include information on calories, fat, sodium, cholesterol, carbohydrates, protein, and diabetic exchanges. This is a nice feature to keep it simple for you.
Appetizers, snacks, soups, salads, seafood, poultry, meats, vegetarian entrees, veggies and side dishes, breakfast dishes, breads, and desserts are all included.
I've tried several recipes and I have to say the Raspberry Citrus Cheesecake is awesome!
Raspberry-Citrus Cheesecake
Ingredients
- 1/3 cup frozen unsweetened raspberries
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon unflavored gelatin
- Cooking spray
- 2 low-fat vanilla wafers, very finely crushed
- 1/2 cup fat-free ricotta cheese
- 1 tablespoon low-fat cream cheese
- 1 tablespoon sugar
- 2 teaspoons fresh lime juice
Instructions
- Line a plate with paper towels and place the frozen raspberries in a single layer to thaw.
- Pour the lemon juice into a small microwaveable cup and sprinkle the gelatin on top and stir. Let stand for 5 minutes.
- Place the paper bake cups in two cups of a muffin pan, very lightly spray the bottoms of the cups with cooking spray. Put the crumbs in the cups and set aside.
- Stir the gelatin mixture, then cover and microwave on 100% power for 30 seconds. Set aside to cool for about 3 minutes.
- In a small bowl, whisk together the ricotta, cream cheese, sugar, and lime juice. The mixture will not be completely smooth. Whisk in the cooled gelatin mixture.
- Sprinkle the raspberries over the mixture and fold them in. Spoon over the cookie crumbs. Using a spatula - smooth the filling. Cover with plastic wrap and refrigerate for 3 hours or until firm.
- To serve - run a flat knife around the outside of each bake cup. Carefully slip the tip of the knife under the bottom of the bake cup and life the wrapper and cheese cake out of the muffin pan. Invert the cheesecakes onto saucers and carefully peel of the bake cups.
